Amatrice. Help Us Help Them.
August 26th, 2016 Cookbook
We are a world away from the tragedy unfolding in Amatrice, Italy. Though we are not on the ground with relief efforts, we are doing what we know how to do: Cook for a cause. When you order Spaghetti Amatriciana, the signature dish of Amatrice, at our two Sea Salt restaurants (in Naples and in St. Pete) or at Barbatella in Naples, you will do a small part to help the victims of this week’s powerful earthquake and its many aftershocks. We will donate 100 percent of proceeds from each dish we serve of Spaghetti Amatriciana to help fund disaster relief efforts.
The dish is $25 for lunch or dinner. The restaurants open at 11:30 a.m. for lunch. Dinner hours are 5 p.m. until 9 or 10 p.m.
Amatriciana is a 1,000-year-old pasta sauce that originated in Amatrice, located in the province of Lazio in the heart of Italy. The dish’s ingredients reflect the diet of local herders, and include guanciale (cured pork), pecorino and tomato. Our interpretation of the dish features a sauce of pomodoro, pancetta, onion, and pecorino. Before the earthquake hit on Tuesday, the people of Amatrice were preparing for the 50th anniversary of one of their most joyful events: a food festival celebrating their beloved Amatriciana dish.
